This Asian American and Pacific Islander Heritage Month, we bring you an icon of the community. Madhur Jaffrey first made Indian cuisine accessible to the West decades ago with her milestone cookbook, “An Invitation to Indian Cooking.” This year marks 50 years since that book launched Madhur into the culinary stratosphere. She spoke with Amna Nawaz for our arts and culture series, CANVAS.
